Chicken Fajitas

Is there such a thing as healthy fajitas? YES! These are delicious, filling and satisfying without the cheese, refried beans, and other unhealthy items.

YOU NEED:

4 boneless chicken thighs cooked and chopped
2 tablespoons olive oil
2 cups shredded tri colored cabbage mix
1 yellow bell pepper cut into thin strips
1 green bell pepper cut into thin strips
1 large handful of baby spinach
2 ribs of celery chopped
2 cloves of garlic
1 tablespoon fajita seasoning mix
chipotle ranch dressing
whole wheat tortillas (or regular ones)

In a large skillet heat oil over med high heat. Add chicken and bell peppers. Cook 5 minutes. Add celery, garlic, cabbage, and seasoning. Cook until peppers are tender.

Place your tortillas on your plate. Lay several spinach leaves over the tortilla. Add the chicken and veggie mixture. Lightly drizzle with Chipotle ranch dressing.

I served ours with radishes and raw baby carrots on the side, hubby had hot peppers with his and we drank Bangel Spice tea. Hubby ate regular tortillas while I had whole wheat. Hubby also added sour cream to his.
