Parsnips

ME:

I roasted parsnips for the first time. Slathered them with olive oil, sprinkled both sides with black pepper, chopped fresh rosemary on top.

I haven't been feeling well, so I've been taking it easy. Reading, a bit of writing, napping. Putting photos on facebook... 311 from England on line. I so want to be done with it!

Why? So I can figure out what to do with them. I have options from an art exhibit of the 15 best photos to a photo-journalistic article. I'd like to do a travel-log memoir type thingy... so I can share with family and friends. So many options.

And then there are the hundreds of Costa Rica photos and the stories behind them!

I'll be going back to Costa Rica this winter. Dates are not set.

I'm also thinking of traveling elsewhere. I've never been to Asia (but Erika will be in China come Spring), nor Africa (but Virginia wants to visit Namibia... when?), nor Aus or NZ.

So... plenty of options if I want to get away. Australia is a bit pricey though...

In the meantime, I'll just dream. My finances are fine at the moment and I have the time. The trip to England went fine (much better than if I'd planned it) but I've struggled since I've been back. Beautiful weather (due to end Tuesday) and no energy to enjoy it. I love Autumn, but I could always be enjoying Autumn elsewhere.
