Maple Cinnamon Rolls

For the dough you will need:

1 1/4 cups very warm water but not hot. Just really warm to the touch.
1/3 cup melted butter
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
4 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
4 teaspoons baking powder
1 1/4 teaspoons yeast

In your mixing bowl or large measuring cup add the yeast to the warm water. Add the sugar and stir. Set aside to proof. In a large mixing bowl, add the dry ingredient and whisk to combine. Once your yeast mix is bubbly and lightly foamy, add the veg oil and vanilla. Then, add the wet ingredients into the dry and combine very well, until a soft dough starts to form. Lightly flour your flat surface and gently kneed the dough until it is not sticky or tacky, but smooth and slightly elastic. If necessary, need in more flour. Then, in a clean, lightly oiled bowl, place your dough and cover. Let rise for 1 hour or until double in size.

NEXT Steps:

You will need:

1/2 cup sour cream
1 teaspoon of cinnamon
1/4 cup good maple syrup {plus two or three tablespoons set aside)
1 cup raisins, or chopped nuts if desired.
1/2 cup brown sugar ( i skimp on the 1/2 cup and I use white granulated sugar with no problems)
1/8th tsp vanilla extract

Mix all this in a small bowl. Dust your flat surface with flour and roll your dough into a rough rectangle and spread the filling mixture over the surface. Then, starting at one end, tightly roll your dough into a long log. Next, slice it into rolls and place in an oiled baking pan. (typically I get 10 rolls but sometimes I make them slightly larger and only get 8). Cover and let rise 20 minutes. Bake in a pre-heated oven at 350 for about 30 minutes...or until golden brown.

For the Icing:

You will need:

1/2 stick butter
2 cup powdered sugar {aprox...sometimes a little more or less depending on humidity)
a tablespoon or so of maple syrup

Mix very well until it is thick and creamy but not runny or pasty. Pour or spoon over your hot rolls once they come out of the oven. Let set 10 minutes before serving.

An alternative my family likes...is to use apple sauce or yogurt in place of the sour cream. Apple Cinnamon rolls are amazing as are strawberry ones! Preserves can also be used in place of the sour cream, so let your imagination and taste buds go wild! A bit of canned pumpkin would also be very tasty. *Pumpkin2*
