After stumbling upon the blog of the Church of the Old Mermaids---I have become more amd more intrigued with their imagery....I was before of course, but it's led me to thinking about how to construct a life if I were a mermaid---which of course I have discovered I am..... MARSHMALLOW MERMAID PIE 9 graham crackers, broken into large pieces 1/2 cup sweetened, toasted, flaked coconut 5 tablespoons melted butter 34 large marshmallows (about 8 ounces)---who counts this stuff? 1/2 cup whole milk 11/2 cups heavy or whipping cream 1 oz. grated unsweetened chocolate---dark for me preheat oven to 375 degrees in a food processor--don't have one---I'll use a blender...combine graham crackers and coconut till coarse crumbs----I'll bet you could use chocolate grahams or cinammon--or a combination add butter and pulse till crumbs combined press into bottom of 9-inch pie pan and bake for 10 min.--cool on a wire rack in large heavy saucepan--medium-low heat cook marshmallows and milk till smooth---stirring constantly...remove from heat and cool completely with electric mixer beat cream till stiff peaks form---fold marshmallow mixture into whipped cream and gently fold in chocolate transfer filling to piecrust and chill top with mini marshmallows, maraschino cherries, and rainbow sprinkles
