Boys, I may not know much, but I know chicken poop from chicken salad. — Lyndon B. Johnson Chicken dishes have been around a long time. The problem was, not everyone was entitled to eat them. This dish in particular probably originated during the 1500-1600s, but only the prosperous could afford to enjoy poultry. This dish comes from Susan via Liz Smith. It’s similar to Mediterranean chicken, an Italian dish made with salsa, that may have its roots in Chicken Caccitaore. This is so simple, it can be thrown together in minutes, and perfect for the busy family.
