One of my favorite foods is my Mom's homemade blue cheese dressing. I will admit, it is not for everyone. Not everyone can handle the bold flavor of blue cheese! I, personally, LOVE IT! I can eat the stuff plain, on crackers, or as a dressing or dip. The more veins of blue/green yummyness with in the chunk, the better the flavor. My favorite use for the wonderful stuff is for blue cheese dressing. My mom got the recipe from a next door neighbor, and it calls for 2 to 4 ounces of blue cheese. When my mother went to make it, she misunderstood the directions and put in 2 four ounce packages of cheese in the recipe! Let's just say that the error has been made every time since then!
My mom usually made it for the holidays because it can be pretty expensive to make for a large gathering. This is especially true when the people are putting it on their salads, their ham, their veggie platter carrots and celery, and anything else they can find! I was the most notorious for eating more than my fair share during family dinners! Now, I make a batch for holidays myself. The only 'problem' is that no one else will eat it! My husband won't touch the stuff because the cheese is moldy and my mother-in-law can't stand the taste and smell of it. This is terrible because now I have to eat the whole bowl of it. Yup, every spoonful is MINE! I eat it on everything and sometimes eat it by itself, and there is NO ONE to tell me not to! It makes life so difficult! 'sigh'
Here is the recipe (which I am sure my mom won't mind me sharing... I hope someone enjoys it (it is great for dipping chicken wings in, too)
Blue Cheese Dressing
• 1 cup Mayo
• 1 cup Sour Cream
• 1 ½ tsp Lemon Juice
• 1/8 tsp Garlic Salt
• 1/8 tsp Celery Salt
• 8 oz Blue Cheese ( the bluer the better)
Blend all except cheese.
Crumble cheese and add.
Refrigerate 24 hours.
