It depends on your POV. If you're writing from Joshes POV then you can't only write what he knows. Therefore you shouldn't (not shouldn't not mustn't) give the character's name until Josh knows it. Having said that, there aren't hard and fast rules. Besides, just because you're writing in third person doesn't mean you're not omiscient. You're writing about him but are you writing from within him? Is it only what he see's? Only what he thinks? Only what he hears? If so then he doesn't know the name and you shouldn't use it till he does. If however the POV is wider, out of body, watching him do things then you have more freedom.
