for my spreadsheet, I use one per story or setting. I share the same sheet for a setting because I need to track characters across stories.
I have one tab for characters, where record name, race, gender, age, role, description and what story they were introduced in.
I have a tab for graphs, where I can see I've got too many white people again. I find it's easy to get into a rut, so having something to remind me to mix it up helps. That's not something everybody needs, but its easy to track and easy to check.
I also have a timeline tab, where I have columns for Economics, science, Politics, War and characters.
This way, from the characters birthdate to the present, I can see what else was happening in the world that might have influenced them.
