Like, I could give "emotional" or "experience" as a genre for my poem. But what do each of these mean? Does 'experience' mean this is about something I experienced? The poem is an allegory I would say, very roughly, for things that actually happened. Things that I had strong feelings about. Or is this all just play by ear?

I don't even know that I am making a lot of sense, but there is my best current expression of the thing that is confusing me.

Just to take it one step further, I would like a list somewhere of what ALL the genre choices mean here at WdC.

Absolutely! This was a for instance. Several more confuse me, but emotional and experience are the biggest questions.
