Super duper delicious! Warning... do not make this if calories are a concern! Yummy!
Ingredients:

~ 8 Boneless skinless chicken breasts. Cooked and shredded. (Recipe for Shredded chicken is posted separately.***)
~ 10 to 12 Roasted, skinned, and de-seeded mild green chili's, diced or 2 cans of diced mild green chilies. Directions for roasting your own chili's is posted separately.*
~ 1 Pkg (12 count) Large flour tortilla's.
~ 1 package shredded pepper-jack cheese (2 or 4 cup pkg, depending upon your tastes.)
~ 1 pkg of shredded cheddar (4 cups)
~ 2 cans cream of mushroom soup.**
~ 1 pint sour cream.
~ 1/4 cup milk
~ 1 can green enchilada sauce. (Or 1 cup of homemade.)
~ Fresh chopped green onions to taste, if desired.

Directions:
~ Preheat oven to 350*
~ Coat bottom and sides of a Large baking pan with non-stick cooking spray.
~ Mix prepared shredded chicken and diced green chili's. Set aside.
~ Mix together undiluted soup, 2/3 of the sour cream, the milk and green enchilada sauce. Set aside.
~ Mix various cheeses together and set aside, reserving 1 cup of cheese mixture separately.
~ Put approximately 1/12 of chicken mixture in each tortilla, along with approximately 1/12 of the cheese mixture, not including the 1 cup in reserve.
~ Roll tortilla snuggly, and place in baking pan seam side down. (I like to roll mine so that both ends are closed to prevent filling from escaping when baking and serving.) Repeat, until all 12 tortilla's have been used.
~ Spread soup mixture over the top of all enchilada's. If you have extra, put it around the ends or in any empty space in baking pan.
~ Now, sprinkle the reserved shredded cheese mixture over all enchilada's.
~ Sprinkle the chopped green onion over all if desired.
~ Bake at 350* for 30 minutes, or until bubbly.
~ ENJOY!

Optional:

~ Once plated, you might like to top this with shredded or chopped lettuce, diced tomato, extra shredded cheese and / or sour cream!


*Fresh roasted chili's, even if you canned or froze them afterwards makes this much better in my humble opinion.
** While using cream of mushroom soup may sound not so yummy, it is! Once you prepare the soup mixture it is not even identifiable that cream of mushroom soup has been used.
