Making sourdough
Takes a long time
If you don’t get it right
All you get is slime
It takes hours
For that flour
To perpetuate
Every day
Throw half away
Of what you make

What to do
With what’s unused?
How do you choose

How can you lose
What you can’t save?

Baking sourdough
Takes a short time
If you get it right
It tastes sublime
It’s been hours
Now that sour
Tastes so sweet
Every day
We mean what we say
We feel more complete

What you can’t save?

You keep it
You feed it
You knead it
With both hands
You bleed it
Until you’re dry
You put it in a place
Close enough to reach
But at a distance
