Listening to "Game of Thrones" after it being years since I read it was amazing. Bran saw things in his dreams that have come true all thoughout the 5 books so far provided. There are still more prophetic elements that I believe will show up in later books, perhaps even beyond "Winds of Winter." Tell me how you pants that.
That's just an example. It just seems to me that the only way you can make a story REALLY fit together satisfyingly is to plot carefully so even your surprises fit unerringly. Maybe you wait until after the first draft, maybe it happens after the story has hit a snag and you are stuck until you can make a map to guide you beyond the plot hole. Plot is just what happens. It can be a good plot or it can be terrible, but what happens, whether you are loved or you reader thinks you suck, is the plot of your story whether you planned it or you came to it by the seat of your pants.
