I made these date bars four years ago and they were a big hit, especially with my Arabic professor and her family. I'm going to be making them this year, hopefully (I have to find the dates), and I am going to send a few of these bars to Twiztid when I send their cookies. I'm still trying to figure out how to mail the cookies,but I'm excited for cookie making season. Anyway, date bars are easy to make and the process is fun. For my non-Muslim friends, I added some spiced rum to the date substance and since the alcohol cooked out, it tasted pretty good. ![]() 2 1/2 cups dates, pitted and chopped 1/2 cup packed brown sugar 1 cup water 3 cups rolled oats 2 cups all-purpose flour 1 cup packed brown sugar 1 teaspoon baking powder 1/2 teaspoon salt Optional: 1 shot of spiced rum (I used Captain Morgan's spiced rum). Know your audience before adding alcohol - as I mentioned above, I included this in the bars given to my non-Muslim friends because Muslims aren't allowed to have anything with alcohol. Some people might not like alcohol in their food at all; just know your audience. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan. To make filling: In a small saucepan, combine dates, brown sugar, and water. Bring to a boil and cook, stirring constantly for 10 minutes. Remove from heat. To make the crust: Combine flour, oats, brown sugar, baking powder, and salt in large bowl. Cut in shortening until mixture becomes crumbly. Press half of crust evenly into baking pan. Spread date mixture over the top. Crumble remaining crust mixture over the top of date mixture. Bake 20 to 25 minutes.
