It's great to have a place to post recipes/links. I found the Chcken Chowder recipe here: https://sugarspunrun.com/chicken-corn-chowder/ Sam--the person behind the website--is a reliable source for clear recipes with tasty results. Highly recommended. I've used her recipes as starting points for many desserts. The only variation I added to her chowder recipe was to start with a conventional mirepoix base. She already has diced onions, so I added diced carrot and diced celery, along with the diced red pepper and diced jalopeno already in her base. Celery, in particular, is high in sodium and so adds a savory texture to sauces and soups. Of course, if your diet limits sodium, you'd need to eliminate it. Also, here's a useful tool for dusting flour or powdered sugar. Recipes (this one included) often call for "whisking" flour into your mirepoix, but I always used to get a clump of flower that would would just gum up instead of whisk. This little mini-sifter is perfect and fits in a drawer. Use it to dust the flower into the mirepoix and banish clumps. Works with gravy and sauces, too.
