Comfort Food recipe 101words CORNED BEEF HASH • 2 tablespoons butter • 2 tablespoons extra-virgin olive oil • 1 large onion, chopped • 5 large Yukon Gold potatoes, peeled and cut into ¼-inch cubes • 1 large carrot, coarsely shredded • 2 pounds cooked corned beef, cubed • 2 tablespoons chopped fresh parsley • ½ teaspoon ground black pepper, or to taste • ¼ teaspoon dried thyme leaves • 1 pinch salt to taste The method is so easy. All there is to it is to cook the onions in the butter and oil, then fry everything else together until cooked through and golden brown. Serve into bowls and top with a fried egg. Yum. Words 250 When I was a very busy mother of three children with less than four years between them, I was always looking for ways to fill them up, and quickly. Although the recipe above is the original one, there are so many ways of making it. I would look in the fridge and use whatever vegetables I had leftover and throw them in. I often used tinned corn beef too. My kids loved it and never left any, but they’d usually smother it in their favourite sauce which was HP sauce from the UK. When my daughter was in her thirties and living on the other side of the country, I had a phone call from her childhood friend. I hadn’t heard from her for years. I was delighted to hear her news, that she was married with children of her own. We chatted for a while and I was about to wind up the call when she said, ‘Oh, I nearly forgot the reason I called.’ I laughed and told her I was always doing that. ‘Yeah, I was just wondering if you remembered the recipe for that hash thing you used to make us when I stayed at yours?’ I laughed again. ‘Oh, Gemma, I don’t think there are any hard and fast rules. It’s simply potatoes, onion, maybe some pumpkin and frozen vegetables and a can of corned beef. I can’t believe you remembered!’ ‘It was the best, Mrs M.’ So that’s my story of Corned Beef Hash.
