When I read the quote my first thought was- Our footsteps are heavier than we believe despite the fact we think we're treading lightly, trying to be the best version of ourselves. That version seems unattainable, which it is because, we can't be someone else we can only be ourselves. It's when we're gone, others realize how much we changed the world by our footsteps. Sadly, over time our footsteps and memories fade until they're invisible.
Before setting your target, you need to think about whether it is necessary for you or not. If it is unnecessary, leaving that target is a wise decision.

I agree, we should be thankful for all things (good and bad) every day. Thanksgiving is a lovely day to gather with others and give special thanks, or to reset, as you have stated. However, I try to give thanks for all things every night before I end my day.
I say try because some days it's difficult to give thanks for much at all with all the side effects of the chemo, not to mention how difficult it is to be thankful for having cancer. But I trust in the Lord and know it all works together for His plan for me.
